What’s a Cacao?

You may ask, “What’s a cacao”? No, it’s not a strange animal noise or birdsong...In actuality, it is the seeds of a South American evergreen tree that are used in making cocoa, chocolate, and cocoa butter — belonging to the genus Theobroma, the name is derived from the Greek for "food of the gods"; from (theos), meaning "god," and (broma), meaning "food". Oh, enough of the etymology class and on to the chocolate but hey, at least you now know…

TRUFFLES: All Hail the Truffle - As master confectioners and devotees to chocolate when we hear the word “truffle” our minds automatically begin to percolate dreamy, creamy adjectives and musings of by gone “truffle “experiences with customers and personal friends.

That marriage of cream and chocolate has taken on many new forms of delicate truffle variations and produced decades of generations of spell-bound consumers. This chocolate divinity has had so much influence in our world of culinary pleasures that May 2 is National Truffle Day!

Cacao’s Artisan Chocolate has been steadfast with remaining faithful to the original concept of chocolate and cream dancing the “danse d’amour”.

We are pleased to continue treating our favorite truffle aficionados or the new disciple with ten varieties of truffles: Grand Marnier, Kentucky Bourbon, Chambord Raspberry, VS Cognac, Madagascar Vanilla with Crème de Cacao, and Kahlua Espresso.

The first sweet nimble of Cacao’s truffles will be a moment of transformation and chocolate merriment.

CARAMELS: Sweet butter, dark brown sugar and cream slowly cooked together to form a firm, but chewy caramel, hand enrobed with milk chocolate and dark chocolate. Samples are currently enrobed with either dark vanilla chocolate or milk chocolate and dusted with sel de mer, sea salt. Samples of caramel and toffee are very similar, but future production will have the caramels slightly bigger, thicker.
